How to tell if fish is fresh
- Look at the eyes. They should be clear and bulging, not cloudy or sunken.
- Lift the gill cover. Bright red gills mean a fresh fish; brown or grey gills mean it has waited too long.
- Press the flesh with a finger. It should spring straight back.
- Smell it. Fresh fish smells of the sea, never sour or strongly fishy.
- In summer, get fish into the fridge within half an hour, or order delivery so it goes straight from the box to your fridge.
